  1. Bison Large, hoofed mammal of the bovine
  2. family. There are two species, both brown.
  3. The European bison or wisent, Bison bonasus,
  4. of which only a few protected herds survive,
  5. is about 2 m/7 ft high and weighs a tonne.
  6. The North American bison (often known as
  7. `buffalo') Bison bison is slightly smaller,
  8. with a heavier mane and more sloping
  9. hindquarters. Formerly roaming the prairies
  10. in vast numbers, it was almost exterminated
  11. in the 19th century, but survives in
  12. protected areas. Crossed with domestic
  13. cattle, the latter has produced a hardy
  14. hybrid, the `beefalo', producing a lean
  15. carcass on an economical grass diet.
